New Year's Stew

Serves 4
Ingredients
- 1 tablespoon olive oil
- 1 pound turkey kielbasa, sliced
- 1 teaspoon chopped garlic
- 10 ounce baby spinach
- 1 can (14.5 ounce) diced tomatoes
- 1 can (15 ounce) black-eyed peas, drained
- 1/4 teaspoon cayenne
- 1/4 teaspoon paprika
- 1/4 teaspoon freshly ground black pepper
Preparation
Heat oil in a large frying pan over medium-high heat and add kielbasa. Cook, stirring occasionally, until browned. Stir in garlic and cook until fragrant, about 2 minutes. Transfer kielbasa to a plate, then add remaining ingredients to pan and simmer about 10 minutes. Return kielbasa to pan. Serve over cooked rice, if desired.
