Pumpkin Bars

Craving a good fall dessert that doesn't leave you feeling guilty? Drop that Halloween candy and eat one of these instead!

Ingredients
- 1 cup pumpkin, canned
- 1¼ cup whole wheat flour
- 1 cup packed dark brown sugar
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/4 cup low-fat buttermilk
- 1/4 cup canola oil
- 2 teaspoons vanilla extract
- 2 eggs, well beaten
- 1/2 cup finely chopped walnuts
- Cooking spray
Preparation
- Preheat oven to 375° F. Coat a 13 x 9 x 2-inch baking pan with nonstick cooking spray.
- Combine all ingredients and beat well, about 400 strokes. Pour into prepared pan and bake for 30 to 40 minutes. Cool on baking rack; cut into bars.
