Where should hot jars from the boiling-water canner or pressure canner be set to cool?
Set hot, processed jars on a folded cloth, board, or
rack. Do not set hot jars in a draft or on a cold, wet
surface. Do not cover them with a cloth. Be sure to
leave spaces between jars to allow for air circulation
to speed cooling. Do not let them cool in the canner.
