Can vegetables be raw (cold) packed?
Home-canned foods keep their quality longer when air is
removed from food before the jar is sealed. Hot packing
is the best way to remove air. It also "shrinks" food so
more will fit into the jar, keeps food from floating,
increases vacuum in sealed jars and improves shelf life.
Color and flavor of hot packed foods is superior to raw
packed foods. It is safe, however, to raw pack some
vegetables if safe processing directions are used. See
