Can you give me processing times for metal cans?
USDA no longer stands behind their old processing
schedules for metal cans and they stopped researching
metal cans for their new canning guidelines published
after 1988. Also, canning in metal cans is more
expensive than canning in glass jars (based on one use
for cans and ten uses for jars). Canning in glass jars
is a more environmentally sound practice as the jars can
be used repeatedly, while cans are one use only unless
recycled. Commercial can companies still sell cans to
individuals. For processing times, contact Dixie Canner
Company.
