Can foods be safely processed in half gallon jars?
Use half-gallon jars only for canning very acidic
juices. Safe times have not been established for any
other foods. See GH 1455 "Fruitful
Canning" for safe canning instructions for juice. Be
sure your boiling-water canner is tall enough so the
water level is at least one inch above jar tops. This
may be a problem with half-gallon jars.
