Can the amount of sugar in pickle recipes be reduced?
Sugar contributes to the flavor and texture of pickles.
High amounts may have a preservative effect. Spoilage
and/or textural changes may result if the amount of
sugar is reduced in brined or fermented pickles. Sugar
may be reduced somewhat in quick pickles since in small
amounts it has no preservative effect. However, flavor
and texture may be affected.
