Is it safe to add vinegar to the water in a canner to prevent mineral buildup on canning jars?
It is safe, as jars vent outward not inward, however, it
is not very effective. Instead, wipe off filled jars
with vinegar before storage. Or follow directions in GH
1452, "Steps
to Success in Home Canning," for soaking empty jars
in a vinegar solution before use. No need to replace the
solution to soak several batches of jars.
