Why are meats more of a concern for food safety than other foods?
There are two reasons microorganisms are more commonly
found in meats:
- Many animals carry microorganisms in their bodies. These same microorganisms can be found in the meats as well.
- To grow, microorganisms need nutrients, and protein is an important nutrient for bacterial growth. Meats are rich in proteins.
